This stuff is addicting. Period. And while not the abstinence to which January cleanses aspire, it’s full of goodness. Besides, cleanses are truly over-rated!
For the Granola: Pre-heat oven to 150° celsius/300° farenheit.
3-cups rolled oats
1 cup raw pumpkin seeds, hulled
1 cup raw sunflower seeds, hulled
1 cup unsweetened coconut (chips, shreds, cubes)
1 cup of plump raisins**
1+ cups of pecan halves
3/4 cup maple syrup
1/2 cup olive oil
~1 teaspoon coarse sea salt
*My Favorite Variations: substitute pecan/raisin for almond/apricot, walnut/cranberry, walnut/fig, or chestnut.
**Your dried fruit must be very moist and/or of reasonable size to cook for the 45 minutes. If it is smaller than a moist, plump raisin it is best to add the dried fruit into the mix during the last 15 minutes of cooking. Small raisins, cranberries, goji fruit are all best integrated toward the end of the cooking process to make sure they remain moist in the toasted granola.
Mix ingredients together and then place on waxed paper-lined cookie sheet/large roasting pan and bake for roughly 45 minutes. Stir every 15 minutes or so to ensure even toasting. Cool so you don’t burn your mouth (or blow, if you can’t wait). Enjoy. Great on its own or with plain yogurt, milk or even ice cream.
