The éclair. A finger-like choux pastry filled with pâtisserie cream and topped with a chocolate glaze. Even bad ones are yummy. And rightfully so. It is tough to imagine what could go wrong with pastry + pâtisserie cream + chocolate.
Do I call this a cake or a bread or a bread pudding? I’m not sure… I created the below recipe this week and want to share it, but I am not entirely sure what I should call it. So…
This is another recipe that I found in my Tartine cookbook, but originally it is from Flo Braker’s The Simple Art of Perfect Baking. I planned on making this cake for years, but never seemed to get around to it.
